Abstract (EN)
In this research, some chemical properties of white mulberry (Morus alba L.), red mulberry (Morus ruba L.) and black mulberry (Morus nigra L.) fruits grown in the Lice district of Diyarbakır province were examined. Samples of two types of white mulberry, one type of red and one type of black mulberry were collected, some of them were kept in the deep freezer at -24 oC degrees as fresh, and some were obtained by drying in the sun. Total phenolic substance (TFM) from fresh and dried mulberries Analyzes were performed using LC-MS/MS. Some of the phenolic compounds obtained are catechin, protocatechinic acid, routine, quercetin, acacetin, chrysin, quercetin, luteolin, naringenin, hesperidin, isoquercetin, vanillin; As for organic acids, phenolic compounds such as citric acid, malic acid, salicylic acid, quinic acid and collorgenic acid were determined. Phenolic components found in TFM determination in four types of fresh and four types of dried mulberry samples were extracted with 96% ethanol. The mulberries used are black mulberry (SD), red mulberry (KD), white sweet mulberry (BTD) and white tall mulberry (BUD). When the amounts of phenolic compounds found in both the fresh and dry states of these mulberries were examined, phenolic compounds and organic acids were found in all of some mulberries, they were found in the fresh state of some mulberries but not in the dry state, and they were found in the dry state of some mulberries but not in the wet state. Protocatechuic acid, Quinic acid, Chlorogenic acid, Rutin, Isoquercitrin, Hesperidin, Luteolin, Naringenin, quercetin, Kemferol, acacetin, compounds were seen in all mulberry samples. In the analyzes carried out with LC-MS/MS, the highest amount of phenolic compounds in the mulberry samples obtained from the Lice district of Diyarbakır province was observed in white sweet mulberries. It was determined that the amount of TFM increased when mulberries were dried. In addition, Na, Mg, Al, K, Ca, V, Cr, Mn, Fe, Co, Ni, Cu, As, Ag, Cd, Pb elements were detected in the heavy metal determination made on four types of dried mulberries with the ICP-MS device. Considering the results obtained, it is seen that the amount of potassium is the highest in all mulberry varieties. The silver element was found only in black mulberry and sweet white mulberry. It was observed that the elements Mg, Al, Co, Ni, K, Ca, V, Cr, Mn, Fe were found to be highest in long white mulberry, and the manganese element was found to have the lowest values in all mulberry samples.
