Abstract (EN)
The apple of cain (Arbutus unedo L.) is an edible fruit which mostly grows in temperate zones of the world and Turkey, common to Black Sea region. The fruit were reported to have medicinal use concerning antidiabetic, diuretic, hypotensive, urinary antiseptic and anti-inflammatory activity. In this study, the fresh and freeze-dried Arbutus unedo fruits were investigated by means of certain antimicrobial, chemical and physical properties. It was found that the freeze-dried form of Arbutus unedo L. was sensitive to E.coli, S.aureus, S.epidermidis and Salmonella spp., in addition there was no significant difference between freeze-dried and fresh fruits in color, pH, total soluble solids, vitamin C content, ash content, taste panel and SEM analysis
