Abstract (EN)
Foods suffer quality loss in many different ways from production to consumption. Because; It is essential to prevent the loss of quality while preserving the sensory properties and nutritional value of foods during storage, transportation and marketing. In recent years, businesses in the food industry have been competing intensely primarily to ensure customer satisfaction. On the other hand, with the development of social education level, today's consumers demand safer, healthier, additive-free, less processed and non-perishable foods. At the same time, they prefer environmentally friendly, easily accessible, transparent and sustainable food packaging as food packaging materials. In this thesis, chicken gelatin obtained from poultry industry residues was modified using caffeic acid, rutin and glycerol; As a result, a biodegradable and environmentally friendly packaging based on chicken gelatin was produced. In this study, both the evaluation of animal wastes by using poultry industry residues and minimizing their harmful effects on the environment; nor is it intended to develop an environmentally friendly biodegradable packaging material as an alternative to petroleum-derived plastic packaging. By using the obtained chicken gelatin, different amounts of caffeic acid, rutin and glycerol, cross-links were formed and packaging films were obtained. This process is optimized using the Central Composite Design according to the Response Surface Methodology. In this context, the quality characteristics of chicken gelatin-based biodegradable films with different properties obtained from 15 different combinations were evaluated. Analyzes such as moisture measurement, amount of thickness, light transmittance properties, color properties, water solubility, water vapor permeability, mechanical properties (tensile strength and extensibility) were made in the films we produced.
