Abstract (EN)
The persimmon fruit (Diospyros kaki), mainly common in China and Japan has an economic importance due to medicinal bioactive compounds and delicious nutritive properties. In this study, 20 kg of fruits were harvested from Aydın, Turkey and treated with Microwave (M), SemperfreshTM (S) and Cold Storage (C), as solely or in combination, in triplicates.When all treatments were considered with respect to the control, it was found that the triple combination, SemperfreshTM - Cold Storage - Microwave (S+C+M) exhibited low microbial counts, in addition, the pH, respiration rate andsensory panel showed that none of these quality criteria were changed, therefore FT-IR, sugar, firmness and the weight analysis of the fruits varied.
