Abstract (EN)
Food loss is a major problem in the food supply chain and it has negative impacts on the environment, economy and society. Besides these negative impacts, food loss is one of the main challenges for ensuring food security. Hence, it is important to diminish food loss in food supply chains. For this purpose, this thesis aims to investigate how food loss reduction can be achieved to enhance food security within the food supply chains with the logistics viewpoint. Food loss occurs throughout the upstream and midstream food supply chain, but it is not clear that specifically which stakeholders deal with food loss or in other words which stakeholders have more salience while dealing with the food loss. So, it is important to identify and classify stakeholders who have more salience while tackling food loss. In addition, to be able to tackle the food loss, it is important to identify food loss drivers. After identifying food loss drivers, it is important to rank food loss drivers which have a higher impact on the waste amount for reducing the overall food loss. To fulfil these objectives, both qualitative and quantitative methods were employed in this study. To identify and classify stakeholders, systematic literature review, semi-structured interviews and stakeholder analysis were employed. To identify and classify food loss drivers, systematic literature review and semi-structured interviews were employed. To rank the food loss drivers, which have a higher impact on the loss amount, the analytical hierarchy process was employed. The results indicate that not all upstream and midstream stakeholders deal with the food loss with similar intensity. In addition, it has been identified that different factors and sub-factors cause food loss for each food supply chain. It has been determined that 3 main factors and 11 sub-factors lead to food loss in the fats and oil supply chain; while 3 main factors and 11 sub-factors cause food loss in the milk and dairy supply chain. It has been determined that 4 main factors and 13 sub-factors can cause food loss in the meat and poultry supply chain; while 3 main factors and 13 sub-factors lead to food loss in the fruit and vegetable supply chain. Furthermore, another key result of this thesis reveals that different sub-factors cause the most loss for different food supply chains. The thesis, which is prepared on the basis of qualitative and quantitative analysis results, offers implications for academics, practitioners and policymakers.
