Abstract (EN)

In this study, it was aimed to determine the phenological, morphological and some fruit quality characteristics and biochemical changes in fresh and dried fruits of some persimmon cultivars grown in Denizli region. In the study, it was determined that all cultivars performed the bud burst stage in April and reached the full flowering period in May. In October, five months after full bloom, all cultivars were harvested. 'Hana Fuyu' was the cultivar that showed the strongest growth in terms of tree characteristics, and 'Fuyu' cultivar showed the weakest growth. In terms of fruit characteristics, it was determined that the largest fruits belonged to the Hachiya cultivar. As a result of the analyzes made in the fruit juices of persimmons, the amount of total soluble solid concentration was between 13.00% (Hana Fuyu) and 20.63% (Fuyu), the pH value was 5.64 (Fuyu) and 5.90 (Hana Fuyu), titratable acidity was 0.14% (Hana Fuyu) to 0.28% (Rojo Brillantee), L* value was 64.00 (Fuyu) and 66.76 (Hana Fuyu), a* value was 6.25 (Hachiya) and 22.97 (Rojo Brillantee), b* value was 61.89 (Rojo) Brillantee) to 70.34 (Hana Fuyu). After drying, it was determined that there was a 33.00% decrease in tannin content in Haciha and Rojo Brillantee cultivars, and 40.00% in Hana Fuyu and Fuyu cultivars. It has been determined that dried Hachiya, Hana Fuyu and Fuyu fruits contain higher flavonoid substances than fresh fruits. It was determined that the highest increase in flavonoid substance content occurred in the Hana Fuyu cultivar with a rate of 302%. A decrease in flavonoid content was determined in Rojo Brillantee cultivar. After drying, it was determined that the total phenolic content, antioxidant activity and phenolic Asits decreased in persimmon fruits, but they still contained high levels of antioxidant activity.
